Coffee lovers… behold – The Double Shot Cappuccino Cupcake.

This week was The Husband’s birthday. Since it fell on a weeknight we decided just to do something low key and celebrate over the weekend. The day started off as usual. My phone at work rang in the morning, it was The Husband confirming I got to work ok… at this time I usually ask him what he’d like for dinner. I know it’s early but hey… a girl needs to plan. His usual reply “whatever you want, I eat whatever you make…”. “OK hmm. No special request for birthday?” I say… The Husband: “No, whatever you want”. Four o’clock rolls around he calls again confirming that I am leaving work on time and again I ask, “do you want me to cook, do you want to go out since it’s your birthday… let me know”… The Husband again, as usual never knows and tells me “I’ll let you know, I don’t know”. Of course typically, he never lets me know and I end up making whatever comes to mind.

That evening when he walked through the door I jumped up with excitement and shouted “I have a yummy surprise for you!”. (I had gone to a local Italian shop and picked up one of their Tiramisu cakes, which may I add is absolutely divine! We love this cake and The Husband always picks it up for special occasions). Seeing my excitement he replied back “What did you bake for me!?”. WOW. There went my excitement. Since The Husband never really puts in any special requests, I felt even worse! I told him I would make it up to him and bake him something special over the weekend.

For anyone that knows The Husband they know he is a picky, picky, picky eater. He may have the sweetest sweet tooth around, however even when it comes to desserts “can’t be too sweet, can’t be too chocolaty, no heavy icing, don’t like this, don’t like that…” So I had to think of the perfect dessert! After contemplating on which cupcakes to make, I decided on two: “Double Shot Cappuccino Cupcakes” and “Strawberry Covered Chocolate Cupcakes” (post to follow). The Husband loves cappuccino and strawberries. So instead of picking between the two, I decided to make both. For those of you who love whipped, fluffy, frosting… these are your kind of cupcakes. Mocha-Choca-Latte goodness.

The Double Shot Cappuccino Cupcake

Ingredients:

Cappuccino Cupcakes:
1 1/3 cups all-purpose flour
2 eggs
1 cup sour cream
1/2 cup unsweetened cocoa powder
1/3 cup of milk
1 1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons instant cappuccino powder or instant coffee powder
1/2 cup (1 stick) unsalted butter, room temperature

Chocolate Cappuccino Frosting:

1 cup heavy cream, chilled
1/3 cup sugar
1 tablespoon unsweetened cocoa powder

1 tablespoon instant cappuccino powder or instant coffee powder

Method:

For the cupcakes – Preheat the oven to 350°. In a large bowl, sift the flour and sugar. Add and mix all of the dry ingredients together and set aside. In another bowl, beat butter, eggs, and sour cream together. Alternating with the milk add the dry ingredients, beating until batter is smooth. Fill the liners 3/4 up with the mixture and bake for 20 minutes or until toothpick comes out clean. Remove from oven and cool on wire rack.


For the frosting – Whip the cream until it looks like whipped cream. Add the sugar, cocoa, and coffee powder. Continue whipping until all ingredients are incorporated.  Stir, cover, and let sit in the refrigerator for about an hour until stiff. Frost cupcakes generously!

  1. Not much of a cupcake eater, don’t really like Magnolia or Crumbs cupcakes. But these cupcakes were awesome, fluffy n moist n perfectly sweet 🙂
