Sometimes during the hustle and bustle of life we don’t stop as often as we should to appreciate the simple things. This Friday I spent the evening in NYC with one of my close girlfriends and it just reminded me of how therapeutic friendship can truly be. Nothing crazy, just a Starbucks in hand and some retail therapy! We were both on a mission to find something to wear for our birthday party, which is always together since we are exactly a day apart. Sad part is that we live 15 minutes away, but somehow we hardly find time to get together, relax, and vent (or as Hubby darling dubs it “gossip”) about life. Spending time together just brought back memories of all the good times that we’ve had and all the things we have yet to look forward to.
I know most people dread each year they age, each birthday as it approaches, but the way I see it… If I’m getting another year in this fabulous thing we call life, I might as well celebrate!. And celebrate we did on Saturday! Since Neely was coming over on Saturday, (so we could all leave together) I wanted to make her something special. Of course this meant it had to be something sweet! So what better to surprise her with then CHOCOLATE! Chocolate as in chewy and moist Hazelnut Chocolate Chunk Brownies. Chocolate and girlfriends… sinful, sweet, and always satisfying when they are near!
Ingredients:
1 cup chopped a chocolate hazelnut bar (I used Cadbury’s)
1 cup sugar
1/2 cup butter (one stick)
3/4 cup flour
2 eggs
6 tablespoons cocoa powder
2 tablespoons oil
2 teaspoons vanilla
1/4 teaspoon salt
Method:
Preheat the oven to 350. Grease or line an 8 inch square backing dish with parchment paper. Beat the sugar and butter until creamy. Gradually add the eggs, beating until the mixture is smooth and fluffy. Add the vanilla, cocoa powder and oil. Then add the flour and salt in 2 or 3 parts, mixing after each addition. Pour batter into pan and sprinkle the chopped chocolate over the batter evenly. Bake for about 20 minutes. Let cool 15 minutes before slicing.
Servings: 16 brownies
